After gentle destemming of the grapes with retention of 20% whole berries, the must was fermented very warm at 25°C, with a peak at 30C. Fermentation on skins lasted 12 days and was performed in a Rotofermenter on minimal rotation. To emphasis the freshness and vitality of this varietal, only 10 % of the blend was subjected to oak maturation.

This wine is a medium crimson colour with aromas of ripe blood plums and dried herbs on the nose. These aromas follow through to the palate and complement the soft tannins and balanced acidity. It is an elegant medium-bodied wine that can be enjoyed now.

The colour is dark and intense, almost impenetrable, ruby red. On the nose it offers floral hints of red roses, cherries and blackberry jam followed by vanilla notes and spices. A wine of great structure, matured in barriques for 15-18 months and refined in bottle for 6 months.

Very rustic and gamy but more importantly, a very interesting and different character. Lots of ripe fruit. Not much complexity but its got that inky berry fruit nose and such a nice, vibrant young palate. It’s a natural food wine and a great food match here. Easy drinking Italian styles of wine at this price point are just too good to pass up - they're tasty and they're good value - and it would be crazy not to put a true blue Aussie or two in there to arm wrestle them. Although these 4 Italians are actually home grown versions, they've got the same trait that I love about the originals and that's personality. The Mt Crawford Riesling and Shiraz Cab (a benchmark Aussie blend) may be outnumbered but they will certainly hold their own.

Barbera ‘Vignota’, barrique-aged for 10 months, is intensely perfumed with lush red cherry fruit and a rich, ripe palate balanced by fresh acidity and a beautiful finish. Guido compares the 2007 Barbera to the outstanding 1990, a vintage that with 20 years was drinking exceptionally well when we tried it last year.

Broad blackcurrants. Dried herb notes. Very ripe, round wine with tart, black cherry bitterness. Leanish wine with high acidity. On its own, it was a little tight and hard. The tart black cherry flavours and high acidity in the wine did blend well with the sweetness of the bacon and the sweetness and acids of the tomatoes. The wine was much enhanced by the food and more so the food with the wine. Excellent match.
