The must was fermented warm at 20-25°C after gentle de-stemming with retention of 20% whole berries. The skins were irrigated three times per day. A long post ferment maceration period of 30 days was employed to increase tannin extraction prior to pressing. The fruit was picked at optimum flavour level, crushed and pumped into an open stainless steel fermenter. The juice was left on the skins for eight hours to pick up colour and then run off into a tank where yeast was added to commence ferment. A good colour. Cherry rich nose with a savoury edge. Savoury juicy mouth watering fruits with firm tannins. A little thin overall. It finishes a bit short. Pleasant with the beef cheeks.
